- Eastern North Carolina: Features a vinegar-based sauce, typically a thin mixture of vinegar, red pepper flakes, salt, and black pepper, sometimes with a touch of sugar. This tangy and spicy sauce enhances the natural flavors of the slow-cooked meat which often includes the whole hog…and fish !
- Western North Carolina (Lexington-style): Employs a sweeter, thicker, tomato-based sauce, often incorporating ketchup, brown sugar, and spices. This style generally focuses on meats.
- South Carolina: Known for its German influenced unique mustard-based “Carolina Gold” sauce, blending yellow mustard, vinegar, brown sugar, and spices.
